therealwintersoldier Posted March 14, 2021 Share Posted March 14, 2021 (edited) Really enjoy making different dishes when time allows so thought it would be a good idea to share some of your favourites, healthy stuff cheap ideas etc. I know @Solario333 @MrUKHackz and others like creating from scratch. Am going to start with a real simple delicious dish. creamy chicken Tuscan Ingredients for 2 2 chicken breasts 250g cherry tomatoes 1 onion sliced and diced 2 garlic cloves minced Around 600ml chicken stock 1tsp dried basil 1/4tsp dried oregano 100g cream cheese (reduced works fine) 50g fresh spinach Cut the tomatoes in half stick on a greaseproof lined baking tray and chuck in the oven @ 220 for 20 minutes. Get a large frying pan or wok bit of oil or low fat spray stick the onion and garlic and cook for 3 to 5 minutes. Once browned put the chicken in and then the stock. Bring to boil then simmer until chicken is cooked obviously turn it through cooking. I normally chuck some loose foil on top. When the chicken is white add the cheese and stir till dissolved. Rip the spinach and stick it in with the tomatoes. simmer for another minute season to taste and hey presto. I use vegan sausages which makes this dish vegan but you can use any sausages you like. Ingredients 1 pack of sausages 1 onion chopped tin of chopped tomatoes tin of baked beans 1 clove of garlic finely chopped olive oil 1 teaspoon dried oregano 1 teaspoon dried basil Salt and pepper In a large pan add some oilve oil and fry the sausages until browned remove them and cut into pieces and add back to the pan. Then add the chopped onion and chopped garlic clove and fry for a minute or so. Then simply add the tomatoes, beans, dried herbs and salt and pepper to the same pan and simmer for 10 minutes or so. I Normally serve this with mash but a nice bit of crusty bread is good with it too.
